The Founder

Meet the Mind Behind OPERA 


OPERA was founded by Marco Monda, an Italian chef driven by the belief that great dining is ultimately about people. 

 

Throughout his career, Marco has led kitchens across Italy and Ireland, holding executive roles within luxury hospitality, fine dining restaurants, and prestigious event venues. 

 

His experience includes leading the culinary team of Rinuccini Restaurant, an Italian restaurant recognised by the Michelin Guide for over 35 years, serving as Executive Chef at Castello Oldofredi, one of Italy’s most renowned wedding and event destinations, and working within Dublin’s luxury five-star hospitality sector. 


After years spent developing culinary concepts, leading teams, and refining his craft, Marco created OPERA to bring the culture, hospitality, and emotional depth of Italian dining beyond the restaurant and into the places where life’s most meaningful moments unfold.

Luxury Gatherings & Celebrations 

A generous Italian-style aperitivo featuring handcrafted canapés, gourmet bites, Roman-style pizza, filled focaccia, artisanal burgers, and curated charcuterie & cheese boards. 


Designed as the beginning of an elegant celebration, where guests gather, conversations flow, and the atmosphere naturally unfolds into a memorable occasion, with the option to continue the evening through seated dining or live cooking experiences.
